Apricot Dessert Tacos


Ingredients:


  • 1 lb apricots (peeled and sliced)
  • 1 lemon (juiced)
  • ¼ cup water
  • 1 tsp cinnamon
  • ½ cup brown sugar
  • 1 cup mascarpone cheese
  • ¼ cup powdered sugar
  • 1 tbsp vanilla
  • 8 small flour tortillas
  • 2 tbsp butter
  • 1 tbsp cinnamon sugar
  • 1/4 cup honey

Instructions:


  1. Preheat oven to 425°.
  2. Add the sliced apricots to a large skillet over medium heat.
  3. Top with the lemon juice and water.
  4. Sprinkle with the cinnamon and sugar.
  5. Caramelize for 10-12 minutes.
  6. Whip the mascarpone, powdered sugar and vanilla together in a large bowl.
