If you love banana bread, then you’ll love these banana cupcakes with cream cheese frosting. It’s also a great way to use up those over ripened bananas.
Ingredients:
FOR THE BANANA CUPCAKES- 2/3 cup water
- 1 tablespoon vinegar
- 1 teaspoon baking soda
- 1 pkg white cake mix
- 2 eggs
- 1 ¼ cups very ripe bananas mashed
- 2/3 cup walnuts optional
FOR THE CREAM CHEESE FROSTING
- 4 cups powdered sugar
- 4 tablespoons butter softened
- 2 tablespoons cream cheese
- milk
- 1 teaspoon vanilla extract
Instructions:
To Make the Banana Cupcakes- Preheat your oven to 350 degrees.
- Mix together water, vinegar and baking soda. Combine with cake mix and eggs. Stir until well combined, and scrape the bowl with spatula.
- Add the mashed bananas. Mix all with an electric mixer for 3 minutes at medium speed.
- Pour into lined cupcake pan. Bake at 350 degrees for 35 minutes or until a toothpick comes out clean.
