Banana Cupcakes with Cream Cheese Frosting


If you love banana bread, then you’ll love these banana cupcakes with cream cheese frosting. It’s also a great way to use up those over ripened bananas.

Ingredients:

FOR THE BANANA CUPCAKES

  • 2/3 cup water
  • 1 tablespoon vinegar
  • 1 teaspoon baking soda
  • 1 pkg white cake mix
  • 2 eggs
  • 1 ¼ cups very ripe bananas mashed
  • 2/3 cup walnuts optional

FOR THE CREAM CHEESE FROSTING

  • 4 cups powdered sugar
  • 4 tablespoons butter softened
  • 2 tablespoons cream cheese
  • milk
  • 1 teaspoon vanilla extract

Instructions:

To Make the Banana Cupcakes

  1. Preheat your oven to 350 degrees.
  2. Mix together water, vinegar and baking soda. Combine with cake mix and eggs. Stir until well combined, and scrape the bowl with spatula.
  3. Add the mashed bananas. Mix all with an electric mixer for 3 minutes at medium speed.
  4. Pour into lined cupcake pan. Bake at 350 degrees for 35 minutes or until a toothpick comes out clean.
