Healthy Vegan Banana Bread


This healthy vegan banana bread is sweetened naturally with dates and bananas for a delicious, moist, and healthy morning or midday sweet bread.

Ingredients:

Wet Ingredients

  • 1 cup dates pitted and soaked in hot water for 20 minutes
  • 4 very ripe bananas
  • 1/2 cup apple sauce
  • 1/4 cup coconut oil melted
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Mix-Ins (optional)

  • 1/2 cup walnuts

Instructions:


  1. Preheat the oven to 350 degrees F. Lightly spray a 8x4 loaf pan and set aside.
  2. Drain the dates and place them in a food processor along with all the other wet ingredients. Blend until smooth.
